Can't say about the rest of the things, but my 24" iMac doesn't hum at
all. I would say that it is pretty quiet in fact. Much quieter than the
previous powermac that was there.
I would be pretty impressed if the mac pro was quieter!

I was against the idea of the iMac, as I had always had powermacs, but
the mac pro was complete overkill for the work that that does now.

MacPros are fine. I doubt there is going to be  a midi one any time
soon.
