welcome to the Mac!
Go into View | Customize Toolbar. Click on Commands. In the left
column, select All Commands, tab to right column, hit O to jump to the
O-section, find the Overtype command, and drag it onto a toolbar. (If
you want to change the icon, right-click on it and select Properties).
Exit out of the Customize dialog.
Now you can toggle it just like you do the Bold button.
Note: to right-click on the Mac, you can hold down control while clicking.
