Assigning keystrokes in Mac Excel?

Version: 2008
Operating System: Mac OS X 10.5 (Leopard)
Processor: intel

I use lots of keystrokes when I work with financial modeling in microsoft
excel at work. When I bought my Mac I was surprised to learn that the key
strokes (for instance for formatting row height "alt+o+e" ) are different
or don't seem to exist. Is there a way to assign keystrokes in Mac exel?
If not are there plug-ins or downloads I can use to make this possible?
