It's much like a Draft message. Until you actually the message, you cannot
edit it. You are the first person that has ever mentioned trying this. I
would try to find some other ways to create and store notes, it you don't
like working with them in Entourage. There are tons of third party
options.
Many are free. One I particularly like is Yojimbo by BareBones (makers of
BBEdit) It's not free, but is an excellent product. It allows for tags
that
makes searching easy. F8 enters highlighted text into a note. You enter
tags
and save.
