Are you sure your Exchange admin has not enabled his servers to delete
items after X number of days? In our environment it's common practice.
Messages that have been moved to the Deleted Items folder and then
deleted should still reside in an invisible location for a short while
longer (two weeks for our location). You can go into Outlook Web Access
(OWA), click the Options button on the left and then scroll to the very
bottom to Recover Deleted Items.
However, if you feel that you're missing messages then the best advice I
can give is to not use your Deleted Items folder as storage. The janitor
can come at any time.
