By default, your Exchange account in Entourage is fully synchronized 
with your Exchange server. That includes the Sent Items folder.

If this is not happening for you then right-click or Control-click that 
folder, select Folder Properties and click the Empty button to empty the 
cache. You can also select the account itself and empty the cache for 
all of your folders.

A final resort would be to use Entourage --> Switch Identity... to 
create a new Entourage identity and set up your Exchange account again.
