The best way to get this added is to send feedback to Microsoft.
When working in Office, you can use the ³Send Feedback² option under the
Help menu in all of the Office applications.

AutoArchive Exchange Account to "On My Computer"
Move all e-mail older than 60 days from your Exchange account folders to
archive folders within the "On My Computer" folder tree.

This script is currently broken in Leopard, but there is a third party
($10)
that does the same thing that is linked on the page.
You could use this script in a new Identity. Switch to the Identity and
run
the script. Now they are archived as backup easily accessible in the other
Identity and not clogging up your Main Identity.
