Well you probably have it added to the list of Login items. If you are
in Tiger or Leopard, you can simply ctrl-click the icon in the Dock to
remove it from the login items.
You might also consider launching Safari and making sure there that the
default browser of your choice (not IE) is selected in the Preferences.
Finally, if you really want to you can simply trash Explorer. I don't
believe the application has any component installed anywhere. You would
be left with a few pref files, but it's no big deal. (I decided to keep
the app on my own mac though since it can become handy with a few
sites).
