You can't, unless you have a recent back-up (which you do, don't you?).
Easy to do on a regular schedule, once you know what to do.
For next time;
If you are using Classic in OS X, it's here;
Macintosh HD:Users:(your name):Do***ents:Microsoft User
Data:Identities:(your id, which can be named for each month, or year).
Switch Identity to see older emails (last year, or month).
