When it freezes up, how exactly does it freeze?  Does the clock in the 
menu bar stop? Can you move any windows or switch applications? Can you 
move the mouse cursor? Can you type?

It sounds like you may be experiencing a hardware freeze. If so, then 
the first suspect is bad (or badly-seated) RAM chips.
