An EyeTV 250 will let you get the video off the discs onto your computer:

Just hook up the EYETV 250 between the disc player and your Mac, install
the EyeTV software, press play on the disc player, and start recording.
Easy as pie!
Then to get the video onto DVDs, you'd use something like Toast:

BTW, the EyeTV 250 makes an *excellent* DVR. You can automatically
record TV shows by name, channel, date, etc. with "smart guides". The
included software is very cool. We have one hooked up to a Mac mini as a
dedicated DVR recording shows 24/7:

Being able to watch what you want when you want, and being able to skip
