Sparse bundles are a Leopard-specific format of disk image. A sparse 
bundle is a folder containing multiple files (bands) which when put 
together contain all the disk image data. The point is, when you just 
update a bit of the whole disk image you tend to just end up changing 
one of the bands. Thus Time Machine only needs to back up one of the 
bands.

The other alternative to OS X's and TrueCrypt's encrypted disk images 
are PGP's encrypted disk images. PGP is however commercial.
