Real simple in Safari.
Under the "Window Menu" open "Activity".
This will show you everything that Safari is downloading to its cache.
You should see the .flv file, and it should be fairly large. This
should be done while the you tube video is playing.
Double click on that listing and it should begin downloading that file
to your default download location.
As the other post said iSquint will covert the file nicely.
