I made an assumption without looking. Now that I've looked, I don't see
word wrap either. I'm sorry.
I opened Mail - I don't use Mail, so I had to experiment with it. Word
wrap is automatic, as far as I can tell. All one can do is change the
wrapping point by changing the width of the window that one is
composing in.
However, no matter what I did, I couldn't delete anything but the text
that was visibly highlighted. No text disappeared if none was
highlighted.
So, I'm no help either, just like the others who couldn't reproduce
your results.
