Depends on what client you want to use.

iChat video conferencing with another iChat user is so easy, my 
70+ Mom does it regularly.  Setup for iChat is to get either a 
"Free" AOL Instant Messenger (www.aim.com) screen name for each 
party.  Then add the other person to your iChat buddy list.  They 
should then appear with a camera icon in your buddy list when they 
are on-line.  click on the camera icon and iChat establishes a 
video conference connection.

The person establi****ng the initial connection can connect to 2 
more people creating a conference of 4 video sessions (assuming 
you have sufficient bandwidth).

If both of you are using Leopard, you can also use iChat to do 
screen sharing so that you can remotely control their system 
(helpful when trying to give aid and assistance to friends and 
relatives).

I think Skype is easy as well, and that should be cross platform.  
To use Skype you download and install the skype app 
(www.skype.com).  Register for a free skype account.  Search for 
the person you want to skype using the email address they 
registered with.  You are good to go at that point.

I do not know about other video chat utilities, so someone else 
will have to describe those.
