I've read through your message and actually wrote a long reply with
additional questions, but unfortunately something went wrong and my
posting never arrived :-(
In the meantime I've figured out a lot of things, but haven't actually
gotten to the part of trying out the connection.

Since I don't have more than one monitor and would rather have a
smooth and fast connection I'll go for Vine server.

Correct me if I'm wrong, but I assume that the *server* part is my
mom's computer, and is where I have to tell her to install Vine
server, and the *client* side is me where I have to install Chicken of
the VNC?
I want to access her computer, but she has no need to control my Mac.

Yup, this is what i want. If she gets stuck some time she can call me
up and time permitting I can show her (literally) how to do things.
I don't need to access her Mac when she's not around.

I'm a little confused about the passwords. *Which* password does she
and I need to enter? Do I need to enter the same password she
sometimes has to enter when installing new software etc. on her Mac?
And what about the password she has to enter into Vine server? Is that
the same Mac logon password as well, or something completely
different?

But I also found a very nice and free widget called IP Widget (http://
cip.physik.uni-bonn.de/~maahn/ip.html). Scroll down to the middle of
the page and it tells you how to use two of them at once.
This is useful if you want to check your local and your public IP
address. I guess both her and I need to know that.

Now here's where I'm getting stuck.
I finally found some information on how to open ****ts on the Mac (by
going to the "Firewall" in the "Sharing" pane and selecting a new
entry where I could actually choose a preset VNC setting).
But I really can't figure out how to test if that ****t is now open or
not. I've tried numerous networking tools on the Mac and this
website:

When I "probe" it I'm told that this ****t is "Stealth". I assume this
means that it's closed and undetectable from the outside.
Does this mean that the hardware router needs configuring?
I've had a look at its settings (by using a web interface), but it's
not obvious as where to go to open up a ****t.

Another thing; having gotten some information about VNC setups on the
web I believe the ****ts needed to be opened are 5900 and 5800. The Mac
"Sharing"-"Firewall" VNC setting I just made is set for ****ts
5900-5902.
